Crab cakes make a delightful lunch or starter and are easily made. They also freeze well so it's worth making a large batch in one session.
1 kg potatoes (peeled and cubed)
2 spring onions
1 small tin of sweetcorn, or even better one large sweetcorn cob from the garden
1 tin of crabmeat ( I use "Eco Mietters de crab" from Leclerc)
salt and pepper
Boil potatoes and puree as you would normally. Add all the other ingredients and mix well. Allow to cool and then shapes into balls or patties. You can then cover them in breadcrumbs if desired.
Heat a fry pan with a little bit of oil and cook patties for about two minutes on each side depending on the thickness. Serve with sweet chilli sauce and salad.
